Gradually beat in 1 cup sugar.
Now stir in 2/3 cup pumpkin and 1 teaspoon lemon juice.
Fold into pumpkin mixture and mix well.

Spread cake in prepared pan and sprinkle with chopped walnuts.
Bake at 375 F for 15 minutes or until cake springs back when lightly touched.
Beat with an electric mixer on low speed until smooth.
Carefully unroll the cooled cake & towel.
Spread the filling over the cake, leaving a 1 border around the edges.
Starting from a short side, roll up the cake and filling.
To serve, sprinkle with additional powdered sugar; cut into slices.
